You know I have fallen hard for buckwheat groats when I buy them in bulk (25 pound bag)! Eating it daily as dehydrated gRAWnola or this creamy comforting bowl of yumminess. It’s not enough that it tastes so good but it’s also good for you.

Buckwheat = Complete Vegan Protein! Gluten-Free and a perfect grain substitute. That’s right-it’s NOT a grain, nor is it related to wheat. According to About.com: Celiac Disease, “Buckwheat seeds are technically the fruit of a plant called Fagopyrum esculentum.”

Benefits of buckwheat: Rich in fiber, magnesium and antioxidants. High in protein, B vitamins, calcium, iron. Contains ALL  eight essential amino acids, which are the building blocks of protein.

What to do:

Put the buckwheat groats in a colander and wash & rinse well with water (I make 1/2 cup at a time).

Let  soak in fresh water (just covering them)for 30 minutes.

Rinse the groats well one last time.

Pour the rinsed buckwheat groats (they resemble Grape Nuts) into your food processor. Add a few bananas, ground flax seeds (grind whole flax seeds in coffee grinder) and whatever else you’d like. I included goji berries, bee pollen granules, (not vegan), Nutiva Hemp Protein & Fiber powder. Whirl until creamy but chunky.

Don’t forget the cinnamon! Whirl again.

Top with raisins and unsweetened flaked coconut.
